Bonjour friends! Sorry it has been so long since I last posted. First it was final exam time getting in the way and kicking my academic butt. Then it was Christmas, New Years, some quality hours spent chillin with my dog, the start of my second (and last!) semester and, well, you get the point. Anyway, here’s what I’ve been up to in the Instagram world lately:
Just because it’s sub-freezing temps outside, doesn’t mean smoothies go out of style. Hec no. Polar vortex or heat wave, smoothies are always a good idea. I like combining almond milk, 1 banana, chia seeds, and whatever frozen berries I have at the time like blueberries, raspberries and strawberries. Sometimes, I throw in some pomegranate juice as well.
I love Le Pain Quotidien. Enough said.
Over Christmas break, I met my sister in Manhattan and we ordered more food than we probably should have because everything sounded SO delicious on the menu. The chicken curry flatbread and arugula/avocado/beets/quinoa/chickpea salad were both divine.
And then Christmas happened. Which means rainbow cookies. Which means Jacqueline is happy.
And then after feeling like I ate my weight in rainbow cookies, I feasted on this kale salad the next day with tomatoes, pistachios, sunflower seeds, goat cheese, and crushed black pepper.
Do you know how many snow days we’ve had this semester so far? Three. Yes, three. Guess that’s what you get when you go to school in Boston. But, I’ve tried to make the most out of my time stuck in my dorm room by reading, getting some homework done, and experimenting with different recipes. The other day, I added frozen blueberries, almond slivers, almond milk, chia seeds and cinnamon to my gluten free oats.
